Yummy! These are one of my favorite quick & healthy meals.
thinly sliced onion
bell peppers cut into strips (fresh or frozen)
sliced portabello mushrooms
whole wheat tortillas
Just saute up the sliced onions, bell peppers (I prefer the red ones or a bag of the frozen mixed strips), and portabellos with ateaspoon or so of taco spices. Then warm the tortillas over the stove in a dry skillet. Serve with salsa and cheese and/or sour cream if you want.
