I love these moist, healthy, hearty, oatmeal pancakes and the kids do too! They are chock full of nutritious grains so they are nothing like the white flour variety that are pretty much an empty meal. They have staying power as well to keep you full because of the whole grains. Mix up a few batches to have on hand or package it up for a quick and easy hostess gift. I am currently working on a label for these that you can print off, but in the meantime mix a batch up to have on hand for the weekend and enjoy!
Oatmeal Pancake Mix
1 C Oatmeal (old fashioned)
1 C Whole Wheat flour
1/4 C Wheat Germ
1/4 C Powdered Milk
1 tsp Baking Soda
1/4 tsp Salt
1 T Brown Sugar
Package the above and write on the label:
Add 2 eggs slightly beaten
2 C buttermilk
1/4 oil
