Homemade SUPER HEALTHY whole grain pancake mix!

Every weekend we have pancakes for breakfast.  The kids love it!  The mess and time however I could do without.  So now we make this whole grain pancake mix from scratch so we can have healthy pancakes in no time! We found this recipe in a whole foods cookbook called "Feeding The Whole Family" by Cynthia Lair.  Pancake mix is so handy to have on hand.  This recipe is healthy enough that you won't even feel bad serving it for dinner for a quick whole foods solution in a pinch.  The other health concern with pancakes aside from the empty while flour (which we just dealt with) is the amount of sugar that is usually involved.  However, I found a recipe for DELICIOUS blueberry syrup that only has 1/4 cup of honey in the whole recipe that I will post later this week!  So mix up a batch today and you will be ready for the coming weekend!
I must say the kids did not enjoy waiting for me to take the photo before they could eat them!  The steam was still rising and I must say I was tempted myself to dig in, but I held off so you all could see how delicious  they were.  Once the photo was done we scarfed them down in no time flat!
Goldie's Whole Grain Pancake Mix
(makes 6 cups dry mix)
2 C barley or kamut flour
2 C whole wheat pastry flour
(I like to use the white whole wheat flour for a more delicate flavor)
1 C buckwheat flour
1 C blue cornmeal
3 Tbs baking powder
1 tsp ground cinnamon
1/2 teaspoon sea salt

Combine all ingredients and store in an airtight container.

To make these delicious pancakes I add 2 eggs lightly beaten, 1 1/2 -2 cups buttermilk (milk plus 1 teaspoon lemon juice per cup), and 1/4 cup melted down coconut oil. Do not microwave the coconut oil.  Instead, set the 1/4c of oil in a dish inside a bowl of hot water till it melts like you would for honey. Just mix all without over beating and fry them up in a pan or skillet that has been coated in coconut oil.
Finger lickin' good!  These are some loveable pancakes!

How many cups of mix do you use to the quantity of wet ingredients listed?

You will need to use about 2 1/2 cups of the mix. Sorry about that. Hope you enjoy them!
