We love our pancake weekend breakfasts! I love how healthy and fast they are. Use the whole grain pancake mix I posted the recipe for the other day or the oatmeal pancake mix I posted a while ago to make a GREAT base for today's CRAZY good blueberry syrup. My favorite part is that the syrup feels like a special treat I am allowing the kids but it only has 1/4 cup honey in the whole batch. The kids end up eating WAY less sugar than if I just allowed them to help themselves to the maple syrup, and they prefer the berry syrup!
Blueberry Syrup

- 2 cups fresh or frozen (not thawed) blueberries, or any other berry or cherries.
- 1/4 cup water
- 1/4 cup honey
- 2 teaspoons cornstarch
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
Just mix all the ingredients together on the stove while the pancakes are cooking and stir occasionally till the syrup thickens. That's it! Eat up!
