We don't even have a garden and we are up to our ears in zucchini! My friends and parents do have gardens and they seem to be partial to zucchini. It must be this hot Colorado sun who knows. So I have been looking for a variety of ways to eat zucchini. Here is what we have been making...

I made a double batch of this already large recipe and stored some batter in the fridge to make later as well as freezing some of the muffins we made for later. Grilled Veggie Sandwich Grilled Veggie Sandwich recipe from All Recipes Our sandwiches had portabello mushrooms and were on whole wheat bread with Jarlsberg Swiss cheese. Wow when I look at all the things we have cooked with zucchini lately I realize how much zucchini we have been eating!! It is so good for us that I am glad we are finding ways to use it all up! What have you been doing with your zucchini?
Thanks for all the zucchini recipes! I can't wait to try some, especially the broiled zucchini, that looks really good! My favorite recipe to use zucchini with is a pampered chef one I got years ago called Italian Pasta stir-fry, I make it all the time. Just saute together onion, garlic & zucchini, add chopped tomatoes, fresh parsley, dried basil & oregano, salt & pepper, stir in some fresh grated parmesan and mix with cooked linguine. Top w/more parmesan. Somtimes I add cooked chicken to up the protein factor. It's such a good, healthy, simple recipe and everytime I make it for friends and family they can't stop saying how good it is!

ReplyDeleteWell, yes! Your memory serves you right, you did make that for pampered chef! I love that recipe though...I really do make it all the time! We moved to Idaho about 3 months ago but we are doing great! Loving the weather here and excited to see how the winter will be.
