I saw a great recipe for granola bars on Positively Splendid and when I asked for a substitute for the sweetened condensed milk she sent me this from cooks.com. YEAH!!!
Easy Granola bars 2 cups rolled oats 1/2 cup wheat germ 1/2 cup chopped nuts 1/2 cup carob chips, yogurt covered raisins or other sweet treat. 1/2 assorted dried fruit (think apricots, cherries, craisins...) 1 (14-ounce) can sweetened condensed milk or the substitute that is listed above.
SWEETENED CONDENSED MILK SUBSTITUTE | |
2 eggs
1 c. brown sugar 1 tsp. vanilla 2 tbsp. flour 1/2 tsp. baking powder 1/4 tsp. salt
Mix all ingredients and use in place of processed sweetened condensed milk in recipes.

I found this amazing recipe with equally tempting photo from positively splendid.
It has all of 5 ingredients aside from the sweetened condensed milk we are substituting to make it healthier.
This recipe is just slightly different than the original to up the health factor.
I like to throw in some coconut as well!
Just mix it all together and throw into a greased casserole dish (9"x 13") and bake at 325 till golden (about 30 minutes).
I will be reducing the sugar in the milk substitute above as I usually don't like things overly sweet and it healthies it up a bit too!

ReplyDeleteCan you believe I keep forgetting to pick up wheat germ so I haven't gotten to try them yet! I want to though as soon as I make it to the health food store!
